I’ve lost count of the number of times I’ve talked about making pesto. It’s one of my staple foods that I use (and eat) constantly; I add it to pasta, spread it on top of pizza instead of a tomato base, and I stir it into sauces for a little extra zing. Yet, whenever I eat it I get it from a jar. Why is that? I’m always hearing how quickly and easy it is to make, so why do I never make it? Well apart from just being completely lazy I also don’t have a food processor, and seeing as this is the very piece of equipment that allows making pesto to be quick and easy it’s maybe slightly okay that I’ve not made it yet. Maybe. Hopefully.
Anyway I was puppy sitting at the parents house earlier this month and they, of course, have a food processor and basil plants. Yes, you guessed it, I realised this was the perfect time to attempt making pesto. I made basil and spinach pesto and guys it’s super-duper easy. And delicious. I had it for dinner with gnocchi, tomatoes and prawns. What a glorious bowl of colourful good stuff.
1 handful of basil
2 handfuls of spinach
1 garlic clove
Parmesan cheese – a good chunk
Lemon juice – from half a lemon
Salt and pepper to season
Olive oil – a couple of glugs
Now simply place all the ingredients, aside from the olive oil, into a food processor and blitz while pouring in the olive oil. Stop once all ingredients are combined and bound together.
